The Restaurant

La Bimba has always focused on using local produce in its menus.
In 2020, La Bimba has chosen to highlight Southern Rock Lobster due to the challenges the local fishing industry has faced as a result of the pandemic. Working with a local fishermen, seafood will be available daily – straight off the boat.

Sustainable Foundations

This development came about because although La Bimba provided menus that made use of vegetables that were in season, Steve wished to transform the restaurant from the inside out and build tables, benches, banquettes and light-fittings with recycled timber from the region, using what was available rather than creating demand for unsustainable or synthetic products.
